2022 French Study confirms a 2015 WHO Finding : Nitrates linked to Cancer

ANSES analyzed the scientific publications in oncology published since the reference work by EFSA (2017) and IARC (2018). It confirms the existence of an association between the risk of colorectal cancer and exposure to nitrites and/or nitrates , whether they are ingested through the consumption of processed meat, or through the consumption of drinking water. The higher the exposure to these compounds, the higher the risk of colorectal cancer in the population.

To limit their exposure to nitrates and nitrites, ANSES also reminds consumers to :

  • limit their consumption of charcuterie to 150 grams per week;
  • have a varied and balanced diet, with at least five servings of fruit and vegetables per day from different sources.

The national food safety body Anses said its study of data published on the subject supported similar conclusions in 2015 from the World Health Organization (WHO).

Anses “recommends reducing consumption of the range of nitrates and nitrites by deliberately limiting exposure through food consumption”, it said in a statement.
